Cleaned chicken gizzards — the tough inner lining removed and butterflied. Pleasantly springy texture (think soft rubber) with mild flavour — which is why they shine when paired with bold seasoning: chili padi stir-fry, soy-braised gizzards, pasar malam-style gizzard satay, and bean sprout stir-fries. High protein (~18 g per 100 g) and low fat. New to gizzards? Marinate 30 minutes in ginger, garlic, and lemongrass first to neutralise any gaminess. A kilo serves four to five.
